Ingredients

  • 1 cup peanut butter
  • 1/2 cup butter substitute
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Directions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the peanut butter, butter substitute, sugar, and brown sugar until well combined.
  3. Add the vanilla extract and mix until incorporated.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  6. Scoop tablespoon-sized portions of dough onto a baking sheet lined with parchment paper.
  7. Gently press each ball of dough down with the back of a fork to create a criss-cross pattern.
  8. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
  9. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
